Freeze drying principle
A drying technique that freezes wet materials or solutions into a solid state at lower temperatures (-10 ° C~-50 ° C or even lower), and then sublimates the water in the liquid state directly into a gas state under vacuum (1.3~13 Pa), ultimately dehydrating the material. The principle of vacuum freeze-drying is based on the three-phase equilibrium diagram of water. Firstly, the temperature of the sample is reduced to below atmospheric pressure to completely solidify the water in the sample into ice crystals. Then, the freeze-drying machine starts to evacuate and reduce the pressure. The solid ice crystals can directly sublime into gaseous water vapor, releasing the water in the sample and ultimately achieving the purpose of drying. Due to the low temperature of the sample and its water during the drying process, it can effectively slow down the rate of chemical reactions, reduce the thermal motion of molecules, and thus reduce collisions and interactions between molecules, which is beneficial for maintaining the integrity of the internal molecular structure and properties of the sample.
